Blueberry Waffles

3 Eggs

1/2 Cup Coconut Milk

3 Tbs Maple Syrup

3 Tbs melted coconut oil

1/2 tsp vanilla essence

1 cup Buckwheat Flour

1 Cup coconut flour

3/4 tsp baking soda

1 tsp white vinegar

1 cup Blueberries

Mix all ingredients together to form a batter.  Add the blueberries last.

Heat the waffle maker and put a little bit of extra coconut oil to prevent sticking.

Cook the waffles until they are light and fluffy.

Serve with Banana Ice-cream and Maple Syrup
