Dolmathes Gialantsi
1 cup rice
2 Large Onions - finely diced
2/3 cup Olive Oil
2 cups Water
2 Tbs Fresh Dill
2 Tbs Fresh Mint
2 Tbs Fresh Parsley
Salt & Pepper to taste
Juice of 2 lemons
30 prepared Grape Leaves (see blog)
2 Tbs Walnuts - roughly chopped

Put diced onions in a pot with just enough water to cover. Cook until the water evaporates. Add 1/3 Cup of oil, walnuts, dill, mint and parsley and Saute. Add the rest of the oil and rice and saute and other 2 minutes. Add 2 cups of water, and cook the rice until done.
Allow to cool and pour lemon juice over the mixture.
Get a prepared grape leaf and place the shiny surface of the leaf down. Put some mixture onto the leaf and roll into a cigar shape. Put the Dolmathes side by side in a dish and cook for 20 minutes.
I like them hot, but they are traditionally eaten as a cold appetiser.
