500ml Gin

4 Large Springs of Elderflower

1 Tbs Castor Sugar

Lemon Peel

​

Pick the elderflower and leave overnight for the tiny black insects to migrate elsewhere then shake well before use.

​

Place all the ingredients into a large jar and infuse overnight

Sieve.  Serve with Tonic Water and Ice.
