Fruit & Herbal Gummies

3/4 C Fresh Berries (frozen is ok too)

1/2 C Coconut Water

1 & 1/2 Tbs Gelatin or 1 tsp Agar

1 Tbs Maple Syrup or honey (not necessary if you have sweet berries)

If using berries:

Place your berries into a blender, remove and sieve to get the juice, reserving 1/2 C of the juice.  Put the pulp aside (I freeze mine for smoothies or yoghurt)

If using herbs (ie lemon balm):

In a saucepan put 1 Cup of herbs and 2 cups of water (to make a tisane).  Gently steep for 10 minutes, strain the liquid and keep 1/2 C of the tisane.  I always add the maple syrup or honey to this blend.

In a stainless steel pot, place your juice/tisane, coconut water, gelatin and maple syrup (if required) and whisk over low heat until it begins to thicken.  This should take approx 5-10 minutes.  Do not boil - we want all the yummy goodness to remain intact and not be destroyed by the heat - so don't be in a rush.

When thickened, pour into your mould.  Leave to cool and refrigerate for a few hours before removing from the mould or cutting them.

 

I have teddy bear moulds for the kids and I use a glass dish lined with baking paper for the adults, which I then cut into squares.

​

You can add any flavour to your gummies.  Try some kombucha or lemon and honey for the winter months.
