Snapper with Ginger and Spring onion
1 fresh snapper
4 tbs soy sauce
4 tbs Mirin (Chinese cooking wine)
5 finely sliced pieces of ginger
4 fermented garlic cloves with a teaspoon of the honey it is in
or
4 cloves of garlic and 1 tsp honey
4 finely sliced spring onions
1 julienned carrot
1 tbs sesame oil

Put the fish into a hot pan and cook in the sesame oil and cover.
Put all the remaining ingredients into a bowl and mix.
When the first side is cooked turn the fish and add the wet mixture.
Keep on the heat until the fish is cooked through.
