Stew for Strong Meat 1594
1kg good quality strong Meat
750ml bottle red wine
750 ml water
3 Onions
2 Tbs butter or lard
2 tsp salt
Pinch Saffron
5 cloves
1 tsp ground mace
1 tsp ground cinnamon
1 tsp dried ginger
1 tbs honey/sugar
1 tsp mustard
2 Tbs Verjuis and any bone marrow you have
1 good handful each of Fresh Rosemary, Parsley and Thyme
10 Prunes
3 dates

Fry 3 Onions (sliced) in butter or lard
Cut Beef, Venison or Mutton into cubes and add to the onions
Add all the spices into the pot
Cover with wine and water
Keep the pot on a heavy heat and remove scum
Add thyme, rosemary and parsley - finely chopped
After skimming add to the pot add 10 Prunes, 3 dates and honey
Allow to gently simmer for an hour.
This absolutely delicious stew is great the first night and absolutely amazing the second. On the second night (if there's any left!) I add 200ml of cream. On the third night there is usually only liquid left, so I add mushrooms and have this with an omelette or on a hash.
