Tomato Sauce
Reliable and easy to make - this recipe makes a small batch and is the recipe I demonstrated at the Kai Auckland Hui.
​1.7kg tomatoes, chopped
1/2 kg apples, peeled and chopped
3 onions, chopped
1 1/2 cups sugar
2 cups malt vinegar
1 Tbsp salt
1/2 tsp black peppercorns
1/2 tsp whole allspice
1 tsp whole cloves
​Put the allspice, peppercorns and cloves into a muslin bag.
Tie the bag with plain string and leave a large loop to hang around the pot handle.
​In a large pot place chopped tomatoes, apples, malt vinegar and salt.
loop the muslin bag over the handle and hang in the liquid.
​Gently heat the mix until the tomatoes and apples are soft.
Remove the muslin bag.
Put the tomato mixture through a mulee or a sieve to remove skins and seeds and return to the pot.
Heat again and add the sugar.
When the sugar is dissolved it is ready for bottling.
